15 Minute Soup (4 Points)

1 1/2 lb Extra lean ground beef 2 cn Minestrone soup 2 cn Tomatoes with green chilis 2 c Pinto beans 2 c Frozen mixed vegetables Salt and pepper; to taste Garlic powder; to taste Brown beef with salt, pepper and garlic. Drain on paper towel and add back to dutch oven. Add remaining ingredients and cook for 30 minutes. Good served with cornbread. 4 Points NOTES : Variation #2: Don't add the ground beef - makes a delicious veggie soup for 1 point per serving! Black beans are a great substitute for the pinto beans, also. Recipe by: Sue B
