1 1/2cLong-grain brown rice
1/2cDried, grated, unsweetened coconut
1/2tsDried thyme/oregano leaves
1tsSalt or to taste
1cCooked pigeon or black-eyed peas (see Helpful Hint)
1/4cFinely minced cilantro
2Very ripe plantains, peeled and cut on diagonal into thin slices and fried
