Four Spices (Quatre Epices)

1 tb Black peppercorns, heaped 2 ts Whole cloves 2 ts Nutmeg, freshly grated 1 ts Ground ginger Mix, then grind in a spice grinder or coffee mill, then re-mix. Store in an airtight container, keep in a cool place away from light. Muchly used in French charcuterie and with slowly cooked meat and poultry dishes.
