Harvard Beets

1 cn (1 Lb) Diced Or Sliced -Beets, Drained, Save Liquid 2 tb Sugar 1 tb Cornstarch Salt and pepper to taste 2 tb Vinegar Drain beets, reserving liquid. Add enough water to beet juice to make 1 cup. Place sugar, cornstarch, salt and pepper in a 1 quart casserole. Stir in vinegar and beet juice. Microwave at high (100%) until mixture is hot and bubbly, 3 to 4 minutes, stirring twice during cooking time. Stir in beets. Microwave at high (100%) until heated through, 2 to 3 minutes.
