Kidney Beans and Rice

1 tb Olive oil (or cooking spray -for FF) 2 Cloves crushed garlic 2 cn Red kidney beans(undrained) 1 md Onion; thinly sliced 1/2 Green pepper sliced -lengthwise. 1 md Bay leaf Salt & pepper to taste From: Erin Dori <firstname.lastname@example.org> Date: Wed, 31 Jul 1996 19:00:03 -0500 cook garlic then add kidney beans and bay leaf. Cook for 5 minutes, then add remaining ingredients and simmer for 20 minutes. Serve over white or brown or wild rice.
