M-O-M's Muffins

         Yield: 10 Servings

1 Egg -- beaten 4 tb Shortening -- liquid 3/4 c Milk 3/4 c Malt-o-Meal(r) 1 1/4 c Flour 1/2 c Sugar 3 ts Baking powder Mix all ingredients just until moistened; DO NOT overmix. Fill muffin cups 3/4 full. Bake in preheated 400-degree oven for 20 minutes. Variations: Add about 2 tablespoons of peanut butter, and/or chopped dried apricots, chopped prunes, or dates. I also have added 1-2 tablespoons wheat germ. Recipe By : Jo Anne Merrill
