Peanut Brittle

2 c Sugar 1 c White Karo 1/2 c Water 1 ts Salt 2 c Peanuts; unsalted, raw Bring first ingredients to boil til makes soft ball in cold water (235'). Add peanuts and cook til golden brown (Hard crackle, 290'). Then add 1 t vanilla, then 2 1/2 t soda and beat quickly. Pour on heavily greased sheet, and when slightly cooled, pull til "paper thin."
