Pickled Red Beets

2 lb Brown sugar 1 qt Vinegar Salt -- to taste Cook beets till tender, peel and cut into cubes or slice. Bring the remaining ingredients to a boil. Pack the beets in hot sterilized jars, cover with liquid and seal at once. Posted to MC-Recipe Digest V1 #144
