Potatoes Duchesse

         Yield: 4 Servings

4 Whole potatoes 1/2 c Hot milk 2 tb Butter -- melted 1 ts Salt 1/4 ts Black pepper 1/4 ts Nutmeg 2 Eggs 2 Egg yolks Boil potatoes until tender. Mash with 1/4 cup milk, butter, salt, pepper, and nutmeg. Beat eggs and egg yolks together, then beat in remaining milk. Beat egg mixture into potatoes until fluffy. Serve at once.
