1lbSweet Italian sausage; casings removed
1mdOnion; chopped
4Stalks celery; chopped
1/2cCanned water chestnuts; quartered
1/2cCoursely chopped pecans; 2 oz.
2tbFresh parsley; chopped
4tsChopped fresh sage or 1 1/4 tsp dried
1/4cChicken stock or canned broth
2tbUnsalted butter; melted, 1/4 stick
Salt and freshley ground pepper
3Eggs beaten with 2-3 T water **, maybe only 2 eggs
