Spinach Cheese Pie (Crustless)

         Yield: 4 Servings

1 pk Frozen chopped spinach 3 Beaten eggs OR 1/4 cup egg -substitute + 2 eggs 1 tb Flour 6 oz Ricotta, pot or cottage -cheese, drained Salt and pepper, to taste 2 oz Bleu cheese or grated -Cheddar 2 tb Minced dried onion Parmesan cheese Thaw and drain spinach. Add eggs, cheese, salt and pepper and onion. Bake in Pam sprayed 9" pie pan or 8" square pan at 375 F. for 35-40 minutes. or Microwave for 9-10 minutes, turning once. Sprinkle with Parmesan cheese.
