Easy Chicken Fried Rice

3Strips bacon, diced
1/2Red bell pepper, diced
1Egg, beaten
3tbSoy sauce
1/4cScallion, finely chopped
1/8cPeas, frozen or fresh
2cCOLD, cooked rice
2cChicken, cooked and shredded
INSTRUCTIONS
1Cook the bacon in a wok or large skillet over medium-high heat until
Crisp.
2Add the scallions, red pepper and peas to the wok. Stir-fry for 1
Minute.
3Add the egg and scarmble.
4Stir in the rice and chicken until heated through, separating the rice.
5Add the soy sauce and stir until heated through.
6Serve immediately.
