New Potato Salad

2 1/2lbSmall potatos; boiled, chilled and sliced (I use unpeeled red potatos)
3tbWhite vinegar (I used rice wine vinegar - it was all I had on hand)
1/4cVegetable oil (reduced from 1/2 cup in original recipe)
1tbPrepared mustard (Dijon!)
1tsCelery seed
1/4cChopped white onion (increased from 3 tablespoons)
1Clove garlic; minced (my own addition)
Salt & Pepper to taste (original called for way too much salt)
1Jar (4-oz) diced pimentos; drained
1/4cBacos or other imitation bacon bits
