Poached Eggs with Chipotle Sauce

2	tb	Shallots, minced
1	tb	Olive oil
1	tb	Flour
1/2	ts	Dried sage
1	ts	Dried thyme
1 2/3	c	Chicken broth
1/2	c	Cream
		Salt to taste
12		Eggs
