Red-Cooked Beef with Noodles

2Inches fresh ginger root, chopped coarsely
1Bulb garlic (at least 10 cloves), slightly crushed and peeled
5Scallions, 3 cut in three pieces, 2 chopped coarsely
1/2cPeanut oil
2tbHot pepper paste (i use sambal oeleck)
1tbStonewall salsa habanero (optional)
6Pickled tabasco peppers chopped (optional)
3Serrano peppers, thinly sliced (optional)
12Thai peppers, thinly sliced (optional)
1tsSzechwan peppercorns (whole)
1tsSugar
3tbSoy sauce (preferably dark low sodium if you can get it)
1lbNoodles (preferably fresh but most anything will do)
