2tbVegetable oil (less, if desired)

1/2cBell pepper, grn, red or yellow, etc. chopped small
1/2cCelery, chopped small
1/2lbSmoked sausage, sliced into rounds, quarter rounds
1tbGarlic, minced
1tbPickled ginger, minced
3cChicken/veg stock, water won't get it
1Chile (I prefer serrano) halved
