Southern Little Cakes

1/2 c Grated lemon peel 1/2 c Peach jam 1/2 c Orange marmalade 4 Egg whites 1/3 c Sugar 2 tb Sugar 1/2 ts Salt Mix lemon and Jam. Beat 3 egg whites, 1.3 cup sugar and salt until stiff. Combine with lemon mixture. Drop from a spoon on clean white or brown paper on a cookie sheet. (I use the baking paper from Pampered Chef, and no, I do not work for them!!) Bake 10 minutes in a hot oven. Remove from oven and cover with a meringue of 1 egg white, stiffly beaten with 2 tablespoon sugar. Return and bake until light brown.
