Spicy Rice (Maggi)

         Yield: 4 Servings

2 tb Butter 1 sm Onion; finely chopped 1 1/4 c Long grain rice 1 ts Chicken Stock Powder 1/2 ts Finely grated lemon rind 1/2 ts Ground nutmeg 2 1/2 c Boiling water Heat the butter in a large frying pan. Add the onion and cook for 2 minutes. Stir in the rice and cook, stirring, for 1 minute. Add the remaining ingredients. Bring to the boil, then cover and simmer over a very low heat for 20 minutes or until the rice is cooked and the liquid has evaporated.
