Braised Whole Fish with Shrimp Sauce

1tbShao Hsing wine OR dry sherry

1/4lbMedium shrimp, peeled, deveined and minced
1Whole Cleaned fish, scaled if necessary OR
1 1/2lbFish fillets or steak
Salt and pepper (optional)
1tbTo 2 tb Cornstarch
2tbSalad oil
1tbShredded or minced fresh ginger
1/2cLow-salt chicken broth
1tbSoy sauce or bean sauce
1tsCorn starch, mixed with 2 teaspoons water
3Green onions, thinly slice on a sharp diagonal (garnish)
