French Onion Soup with Miso
Yield: 4 servings
1 tb Vegetable oil 4 lg Yellow onions; thinly sliced 3 tb Dark miso 2 c Water 4 sl French bread 1 tb Dijon-style mustard 1 c Shredded reduced-fat Swiss -cheese. or soy ; equivalent 1. Heat a large heavy pot over medium heat. Add oil and onions and toss to combine. Cook over very low heat for 1-1/2 to 2 hours, stirring every 15 to 20 minutes. 2. Dissolve mis0 in 1/2 cup water and add to pot along with remaining water Bring to a boil, stir well, and remove from heat. 3. Preheat broiler. Divide hot soup between 4 individual oven-proof bowls.
